SEBASTIAN SHARING HIS MUMMAS VERSION OF CACCIATORE
Sebastians mission today was to make a cooking YouTube channel, so we did ! We are in lockdown again and I have been so consumed with homeschooling Zachary that he has been left to his own devices a lot and hence rather bored. So here we have it, video and all! We served this with a lovely lemon parmesan mash and rocket salad and there were even left overs for lockdown lunch the following day! Bulk it out with a few veggies too even.
1 Kilo of Chicken (we use thighs)
4 Cloves of Garlic
2 Tablespoons of Capers
1/2 Cup of Black Olives ( and a bit of brine - I don't go overboard on the olives as I use capers as well.)
Lemon Rind and Juice of one large lemon (Sebastian calls it lemonade!)
1 Can of Chopped Tomatoes (or 2 instead of the puree)
300 grams approx of puree or as above (We just love the Mutti puree)
1/2 - 3/4 Cup of Red Wine
6-8 Sprigs of Thyme
Salt & Pepper
