So this really is the easiest chicken pie and so good to feed the family and includes lots of veggies.

1 x Rotisserie Chicken
1 x Large Head of Broccoli 
1/2 Cauli (I used frozen Cauli rice for this one)
1/2 -3/4 Cup of Peas 
1 Can of Campbell’s cream of chicken soup
1 1/2 Sheets of Puff Pastry 

Really it’s just about using what ever easy cook veges ounce got to use in the fridge but broccoli is a great start. If you like a cheesy pie you can add in some grated cheese too. 

Break off all the chicken into good pie size pieces, place in a lasagne style dish, chop broccoli into florets and pop over the top. Add cauli, I like to chop this up a bit smaller or use cauli rice which is even easier ! Add peas if to your liking or any veges you may have that need using up that will cook at approx. the same rate .. 

Pour the can of soup over the top and mix it up quickly, add cheese (optional) and some extra salt and pepper then cover with pastry.  I like to decorate with off cuts of pastry ! Brush with a little milk and bake for 35-45 mins depending on oven.. keep an eye on it, the veges will cook at about the same rate as the pastry is ready.

So easy!
