BEETROOT & ORANGE ON FETA WHIP WITH CRISPY BUTTER SAGE

Feta Whip
1/2 block of Feta
1/2 Lemon
Squeeze of Honey
1 Garlic Clove


2 Beetroots
2 Garlic Cloves
Oil
Garlic Chives
1 Orange
Handful of Sage
25g Butter approx
Reduced Balsamic Vinegar

Blitz together in a food processor or something that will get a nice smooth consistency all of the ingredients for the feta whip, use a soft and creamy feta, add honey to your desired taste - I probably add about a tablesooon of runny honey.

Dice your beets into fairly small cubes so they cook quickly and are lovely bite size pieces, coat in some oil and roast these for about 35 mins with a bit of chopped up garlic and I sprinkled garlic chives over the top.

Use a sharp knife (always) and cut off the skin of a large naval orange and slice pretty thin slices.

In a pan melt the butter and gently fry the sage leaves until crispy, tip out carefully on a paper towel or use tongs to remove from pan.

Aseemble on a lovely large plate … spears the feta whip around the base using the back of a large metal spoon, place your roast beets, then you slices of orange and top with the crispy sage leaves. I then lightly drizzle with a reduced balsamic vinegar, voila ! Such a pretty dish to do when hosting guests as an additional salad in any season.
