
ZACHS DORIS PLUM SPONGE PUDDING
FRUIT BASE:
- 25g Butter, melted
- ¼ cup Brown Sugar
- 1 tsp Mixed Spice
- 85g can Doris Plums, drained and remove pips
PUDDING SPONGE:
- 125g Butter, softened
- ½ cup Castor Sugar
- 2 eggs
- 1 cup of Standard Flour
- 2 tsp of Baking Powder
- 2 Tbsp milk
- 1tspn Vanilla Extract
METHOD:
Pre heat oven to 180 degrees.
Cream butter and castor sugar together until white with electric beater then add eggs one at a time. Sift in flour and baking powder mix and add milk and vanilla extract.
For the base mix your melted butter and brown sugar with mixed spice and place In a lightly greased baking dish approximately 24cm square with atleast 8-10 cm depth (or similar volume) evenly place drained plums ( or alternative stewed or canned fruit ).
Evenly spoon dobs of the sponge pudding batter all over the plums then with a spatula evenly soread to cover. If your dish is too large the mix won’t cover the plums but if you wanted to do a larger version of this just double to recipe, it will get eaten ! Beautiful left over for breakfast too !
Set oven at 180 degrees and bake for 40 minutes or until the pudding springs back when lightly touched. Serve warm with softly whipped cream.
