ROASTED CABBAGE & CASHEW CREAM

These flavours are soooo good, this dish will impress even your most foodie of friends as a side on the dining table ! Try it !

Roasted Crumbed Cabbage & Cashew Cream

Half a cabbage ( I used plain green cabbage )

Approx amounts for oil dressing to mix and baste cabbage:
1/2 Olive Oil
2 teaspoon Smoked Paprika
1 teaspoon Curry Powder
1 teaspoon Salt
1/2 Juicy Lemon

Parmesan & Breadcrumbs

Cashew Sauce:
3/4 Cup of Cashews
1/4 Cup of Water
1/2 Cup of Coconut Cream
Chilli powder to taste
1/2 Teaspoon of Garlic Granules or fresh garlic
1/2 Juicy Lemon

Mix above oil dressing ingredients in a small bowl to brush all over the cabbage on both sides, then pour the remainder over the top. Bake in moderate oven for approx 40 mins. Add a touch more olive oil and breadcrumbs and parmesan on top and put back in for approx 15 mins.

Put all the cashew cream ingredients in a small food processor and leave the cashews to soak in the liquid whilst the cabbage is baking. When ready wizz till creamy and smooth, add coconut for more cream or water to thin as you wish and season to taste with salt ( don’t be shy ).

Pour the cashew cream over the top of the wedges of cabbage before serving and send us a pic of this glorious dish !!!! Enjoy !
