This recipe is a complete winner and so easy! Use the base recipe and add either pear as per this recipe or use another fruit such as apples or peaches or just leave the fruit out, it makes no difference but I adore the pear version. 

Pear & Almond Gluten Free Cake:

 4 Eggs
200 grams melted Butter
1 teaspoon Vanilla Essence
1/4 teaspoon Salt
1 3/4 Cups of Almond Meal
2/3 Cup if desiccated coconut
3/4 Cup Castor Sugar
3-4 pears

Beat eggs and vanilla essence until they begin to thicken, add sugar and beat till creamy, add melted butter and rest of dry ingredients and mix well.

Line a round tart tin or you can make as a cake also. The mix is quite runny, trust it will set as it bakes. 

Add sliced fruit ( pear ) to cover evenly over the top and sprinkle with flaked almonds.

Bake at 180 degrees for 35-40 minutes until it springs back at touch and knife comes out clean. 

Allow to cool and dust with icing sugar. Beautiful served with a little cream, yoghurt or icecream. 

Dairy free adaption: You can swap out the butter for 200 mls of vegetable or coconut oil for approx.
