GREENIES, MUSHROOM & CHICKEN FILO SCRUNCH PIE

So this crunchy delicious number is a complete hit with the whole fam bam! The kids woke up this morning asking where the left overs were and they were gutted to know they had already been bet to it ! Jam packed full of green goodness or whatever you need to use up that works in a pie. This one was as below:

Greenies, Mushroom & Chicken Filo Scrunch Pie

1 large onion
3 large cloves garlic
1 courgette
1/2 bag of brussel sprouts
1/2 bag of mushrooms
3 spring onions
Handful of garlic chives 
3-4 sprigs of thyme
A large bag of spinach or an armful as it were from the garden! 
6-8 Chicken thighs diced up
Half a cup of white wine ( optional - actually everything is optional except the Filo ok! )
Chicken stock powder - to own taste
1-2 cups of milk
2 tablespoons flour 
8 Sheets of Filo pastry
Melted Butter
Parmesan

Once all reduced and chicken is cooked through add a couple of tablespoons of flour to a cup of milk, stir until lumps dissolve and add into the pan stir as it thickens as mil until desired thickness resembles a pie filling. Empty into your casserole or pie dish.

Lay out your filo and brush each sheet individually with melted butter, scrunch and pplace on top. I used 7-8 sheets for this pie. Sprinkle with parmesan and I sprinkled paprika on top.

Bake in moderate oven 30-35 minutes or until golden and crispy on top.
