ZUCCHINI & BACON SLICE WITH CRISPY CHILLI OIL

Zucchini & Bacon slice aka frittata is something I've been making for years, it's such an easy one for holiday season, lunch or breaky and you can freeze it in portions for busy periods. You can't easily screw this up and feel free to add or sub zucchini for broccoli, asparagus, beans or spinach or a a few of these, more greens the better! Bacon or ham will work, I've used a mix of both as I was using up what I had, put as much as you want/have or none at all and just use the cheese to flavour it. I make it a little different each time depending on what I have : )

4 large zucchini grated (I squeezed out the liquid as shown in instagram reel) 
1 pack of feta
8 rashers of bacon or equivalent ham
1 cup of grated tasty cheese
2 red onions
12 eggs
3/4 cup of milk
1 cup of self raising flour
salt to taste (approx 1 tspn - feta & tasty is salty so go easy)
Apostle Crispy Chilli Oil

Bake 180 until golden brown and no liquid oozing out when you push knife into middle.
