TRUFFLE EDAMAME NOODLES WITH ENOKI & OYSTER MUSHROOMS

Plant based and vegan ( minus the parmesan ) recipe which the kids will also love ( maybe )!

Who’s discovered the Trident Edamame Noodles, made from 100% Edamame Bean ? They are quite firm but a really good alternative to another wheat meal, cooked up with some great flavours they’re amazing and only take 2-3 minutes to cook in boiling water. 

Ingredients:

1 pack of Trident Edamame Noodles
A pack of Enoki mushrooms or as many as you want!
A pack of Oyster mushrooms
Handful of Whitaker mushrooms
1 white onion
3 cloves of garlic
1/2 cup of vegetable stock or a little water
Salt and Pepper - to taste
Soy Sauce
1-2 teaspoons Fish Sauce ( depending on quantity of mushrooms.)
Rocket
Parmesan ( optional )
Truffle Oil

Sauté the onion and garlic, add the mushrooms and reduce, put noodles in a deep bowl, pour boiling water over tthem, over and leave for 2-3 minutes, drain and add to pan with the stock, soy & fish sauce and salt and pepper.

Sever with rocket (+ optional parmesan) and truffle oil generously drizzled over everything !
