FESTIVE BAKED CRANBERRY BRIE

I love baking cheese so it’s soft and gooey and this super quick easy recipe ( not even as too easy ) is a great one for a Christmas Eve, pre dinner or present opening snack. Those that have holidayed with me in the Christmas break have no doubt tried these, they get requested now so we often do 2 or 3 at a time…

Festive Baked Brie:

Wheel of Brie or Camembert
Puff Pastry
Cranberry sauce

Milk to brush on pastry
Thyme

Pop a generous scoop of cranberry sauce in the middle of the pastry sheet, probably about two tablespoons, put the cheese wheel on top and wrap the cheese. Cut of any excess pastry you don’t want, turn it over , lightly brush with milk and I like to put some tiny thyme leaves on top with a touch of salt and pepper. Though come to think of it some chopped up dried cranberries on too could be good, as on half way through though so they don’t burn.

Bake at about 200 degrees until pastry is golden, (I guess about 30-35 mins). Let cool for a few minutes, though serve while hot.
